GREEN PEA SALAD 
2 pkgs. frozen green peas
8 oz. sharp cheddar cheese
1 (4 oz.) jar pimentos
1 c. celery, finely chopped
1 tbsp. grated onion
1/4 c. mayonnaise
5 spring onions
6-8 lettuce leaves

Cook peas according to package directions. Drain well on paper towel. Cool. Peas must be very dry. Grate cheese. Drain and dice pimentos. Combine peas, cheese, pimentos, celery, onion, and mayonnaise. Toss gently. Do not mash peas. Cover bottom and side of dish with lettuce leaves. Gently pour salad in dish and garnish with spring onions. Chill well.
