ELDERBERRY PIE 
3 c. elderberries
1 to 1 1/4 c. sugar
3 tbsp. flour
1/4 tsp. salt
1/2 tsp. cinnamon
1 tbsp. butter
3 tbsp. lemon juice

Mix ingredients together. Put all into two unbaked 9-inch pie crusts and bake at 450 degrees for 10 minutes, then 375 degrees until bubbles are thickened.
