FRESH ELDERBERRY PIE 
3 c. elderberries
2 tbsp. lemon juice
3/4 c. sugar
Pinch salt
1 heaping tbsp. cornstarch

Mix and bring to a boil. Put into unbaked pie shell. Bake at 450 degrees for 10 minutes; reduce heat to 350 degrees and bake for 45 minutes longer, or until nicely browned.

works best if you leave out 2 c of berries and add just before filling pie crusts
