SPINACH TURKEY MEAT LOAF 
1 lb. ground turkey meat
1 egg
1 slice bread
1 1/2 tbsp. milk
1/4 med. onion, finely chopped
2 tbsp. raisins
6 med. mushrooms, sliced
1 tbsp. A-1 sauce
Salt and pepper to taste
1/2 pkg. frozen leaf spinach, defrosted
Lo-cal sliced cheese, approx. 3 slices

Tear bread into small pieces; put in large mixing bowl, add milk and eggs. Add all ingredients except spinach, cheese and turkey meat. Mix well. Slowly add turkey meat until thoroughly mixed.

Roll out turkey meat on wax paper keeping width to 8 inch and height to approximately 1/2 inch. Add a layer of spinach. Add a layer of cheese. Using wax paper roll meat into an 8 inch log. Gently place in loaf pan. Cook in oven 350 degrees, 30 minutes or until done. Serves 6 people.
