BLACK WALNUT CAKE 
2 1/4 c. sifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 c. buttermilk or sour milk
1/2 c. chopped black walnuts
1 1/2 c. sugar
1/2 c. shortening
2 eggs
1/2 c. strong black coffee
1 c. grated coconut
1 tsp. vanilla

Grease and flour 13x9 inch cake pan. Preheat oven to 375 degrees. Cream together sugar and shortening; add eggs and vanilla. Sift together flour, baking powder, baking soda and salt. Add to the creamed ingredients alternately with the coffee and buttermilk. Stir in coconut and black walnuts.

Bake for 40 minutes. Serve warm with vanilla ice cream or lightly glaze with vanilla icing, or frost with cream cheese frosting.
