APPLE-RAISIN CAKE 
2 1/4 c. self-rising flour
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/3 c. plus 2 tsp. unsalted butter
1/4 c. granulated sugar
1 tsp. baking soda
1 1/2 c. applesauce (no sugar added)
2 sm. Golden Delicious apples, cored, pared, and shredded
1 c. less 2 tbsp. raisins
2 oz. shelled walnuts, chopped

Spray an 8 x 8 x 2 inch baking pan with nonstick cooking spray and set aside. Into medium bowl sift together flour, cinnamon, and cloves; set aside.

Preheat oven to 350 degrees. In medium mixing bowl, using electric mixer, cream butter; add sugar and stir to combine. Stir baking soda into applesauce, then add to butter mixture and stir to combine; add sifted ingredients and, using electric mixer on medium speed, beat until thoroughly combined. Fold in apples, raisins, and walnuts; pour batter into sprayed pan and bake for 45 to 50 minutes (until cake is browned and a cake tester or toothpick, inserted in center, comes out dry). Remove cake from pan and cool on wire rack.
