CARROT CASSEROLE 
6-10 carrots
1/2 c. mayonnaise
1 tbsp. horseradish
1/4 tsp. pepper
1 tsp. brown sugar
2 tbsp. grated onion
1 stick butter
1/2 c. bread crumbs

Preheat oven to 375 degrees.

Cut carrots into lengthwise pieces and cook until tender. Drain. Save 1/4 cup of the liquid. Arrange into casserole. Blend 1/2 cup mayonnaise, horseradish, salt, pepper, sugar, grated onion and the liquid from the carrots. Pour over carrots. Melt 1 stick butter and 1/2 cup bread crumbs and spread over top of carrots. Bake in 375 degree oven for 15 to 20 minutes. Serves 8.
