ONION CASSEROLE 
4 med. Vidalia onions, sliced
12 saltines or 15 Ritz crackers, crushed
1 stick butter
1 can cream of mushroom soup, undiluted
2 eggs
3/4 c. milk
Salt & pepper to taste
Grated Cheddar cheese

Melt butter and cook onions until tender. Butter a baking dish and line with cracker crumbs. Add onions and soup in layers until dish is full. Beat eggs and add milk, salt and pepper. Pour over top of casserole. Sprinkle with grated cheese and a few more cracker crumbs. Bake at 350 degrees until brown and bubbly.
