PUMPKIN SOUP 
2 tbsp. butter
2 tbsp. chopped onion
1/8 tsp. thyme
1 c. tomatoes
2 c. chicken broth
Pepper
1/4 c. chopped green pepper
Parsley
1 bay leaf
2 c. pumpkin
1 tsp. salt

Saute green pepper and onion until soft. Put through blender green pepper, onion, parsley and tomatoes. Add pumpkin, spices and stock. Simmer about 30 minutes. Freezes well.
