APPLE BARS 
1 c. plus 2 tbsp. shortening
2 3/4 c. flour
1 tsp. salt
Milk
1 egg yolk, slightly beaten
1 c. crushed Wheaties cereal
7-8 c. thinly sliced pared apples
2/3 c. sugar
1/2 tsp. cinnamon
1/4 tsp. allspice
1 egg white
1 c. powdered sugar
1/2 tsp. vanilla
1-2 tbsp. water

Heat oven to 350 degrees. Cut shortening into flour and salt until particles are size of small peas. Add enough milk to egg yolk to measure 2/3 cup. Stir into flour mixture until pastry almost cleans sides of bowl. Gather pastry into ball; divide into 2 equal parts.

Shape each part into flattened round on lightly floured cloth-covered board. Roll one part into rectangle, 15x10 inches, fold into thirds. Place in jelly roll pan; unfold to cover bottom of pan. Sprinkle crushed cereal on pastry.

Mix apples, sugar, cinnamon and allspice; spread over cereal. Roll remaining pastry into rectangle 15x10 inch, fold into thirds. Gently place over apples, unfold.

Beat egg white until soft peaks form; spread over pastry. Bake until crust is golden brown, 55 to 60 minutes.

Mix powdered sugar, vanilla and water until smooth; drizzle over warm crust. Cut into bars, about 3 x 1 1/2 inches.
