FRESH TOMATO SAUCE 
1 lb. fresh tomatoes, diced in 1/4 inch pieces
5 to 6 lg. sprigs fresh basil
5 to 7 sprigs fresh parsley
3 lg. cloves garlic
3 tbsp. olive oil
1 tbsp. balsamic vinegar (or red wine vinegar)
1/2 tsp. salt
1/2 tsp. pepper

Place tomatoes in large bowl. Finely chop basil sprigs to make 1/3 cup and parsley to make 1/4 cup. Crush garlic. Add herbs and garlic to tomatoes. Gently stir in oil, vinegar, salt, and pepper to mix.

Note: This sauce is good tossed with tortellini or on spaghetti or raviolis. Has nice garlic taste.
