FRESH AND LIGHT TOMATO SAUCE 
1 tbsp. olive oil
1 med. sized onion, chopped
2 garlic cloves, minced
6 tomatoes, peeled, seeded, and cut up
1/4 c. red wine or beef broth
1 tbsp. chopped fresh basil leaves
1/2 tsp. sugar
Salt
Ground pepper
1 pkg. (1 lb.) your favorite pasta, cooked and drained

In large skillet over medium heat, heat oil. Add onion and garlic. Cook 5 minutes, stirring often. Stir in tomatoes, wine, basil, sugar, and salt and pepper to taste. Reduce heat to low; simmer 15 to 20 minutes to blend flavors and heat through; do not overcook. Serve immediately over hot pasta.

Servings: Makes 6. Preparation time: About 10 minutes. Cooking time: About 20 to 25 minutes. Calories: About 55 per serving.
