CHICKEN ROLL-UPS 
4 boiled chicken breasts
1/2 c. chopped onions
1/4 c. chopped celery
1 c. cracker crumbs
1 tbsp. parsley
1 tsp. poultry seasoning
Salt and pepper to taste
1/2 tsp. Cavender's Greek seasoning
1 beaten egg
1/2 c. water
2/3 c. grated Cheddar cheese
12 slices cooked ham or luncheon meat

Saute onion and celery; add cooked, diced chicken. Combine cracker crumbs and seasonings. Add the egg and water and blend well. Add the chicken mixture to cracker and blend. Mix in cheese; does not have to melt.

Place a tablespoon of the chicken and cracker mixture on a ham slice and roll up jelly roll style. Secure with a toothpick. Place in 9x13 inch pan. Pour any cheese sauce over the top. Bake until hot, about 350 degrees for about 20 minutes. 8 servings.

MY CHEESE SAUCE:

1/2 stick butter
1 1/2 tbsp. flour
1 c. milk

Cook in microwave until thickened. Add 1/2 pound of grated cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
