GREEN TOMATO MINCEMEAT 
6 lbs. green tomatoes
2 c. raisins
2 c. strong coffee
2 tsp. orange zest (grated)
1 tsp. salt
1 tsp. allspice
2 lbs. tart apples
4 c. brown sugar (firmly packed)
1 lemon (grated peel and juice)
1/2 c. vinegar
1 tsp. nutmeg

Core and quarter tomatoes and apples, put through a food chopper or food processor with raisins. Combine all ingredients in a large saucepan. Simmer 2 hours, stirring frequently.

Pack at once into hot pint jars. Adjust lids. Process in a boiling water bath for 25 minutes. Remove jars from water, cool. Makes 10 pints.
