SWEET ONION QUICHE TARTS 
1 lg. sweet onion
2 tbsp. butter
4 slices bacon, fried and crumbled
1 c. grated Swiss cheese
3 eggs
1 1/2 c. light cream
1/2 tsp. salt
1/2 tsp. pepper

Skin and slice onion thinly. Separate into rings. Should measure 4 cups. Saute onion rings in butter until golden and tender. Line 4 (5 inch) tart pans with butter pastry (recipe follows). Divide sauteed onion, bacon, and cheese evenly among tarts. Beat eggs; add cream and seasonings. Pour over onion mixture in tart shells. Bake at 350 degrees for 30 to 35 minutes or until set. Place tarts on baking sheet for baking.

Butter Pastry: Combine 1 1/2 cups flour with 1/2 teaspoon salt. Cut in 1/2 cup butter until texture of coarse crumbs. Add 3 or 4 tablespoons water. Blend until mixture holds together. Roll out in circles to fit 5 inch tart pans.
