RICE CASSEROLE 
6 tbsp. butter
1 onion, chopped
1/2 green pepper
1 1/4 c. rice, uncooked
2 cans beef consomme
1/2 lb. fresh mushrooms, cut up
3/4 c. cashews

Saute onion and green peppers in butter. Brown rice in pan after you've sauteed previous ingredients. Put all ingredients in 2 quart casserole. Bake uncovered at 350 degrees for 60 minutes.
