PINEAPPLE UPSIDE CAKE 
1 c. brown sugar
1/4 lb. butter
1 lg. can crushed pineapple, drain and save juice
1 1/2 c. sugar
1/4 tsp. vanilla
1 1/2 c. flour
3 eggs, separated
8 tbsp. pineapple juice
1 tsp. baking powder

Melt butter and brown sugar in a 10 inch round pan (iron skillet works great). Pour pineapple on the brown sugar and butter. Mix sugar and egg yolks together, add vanilla and pineapple juice. Then add all dry ingredients. Beat egg whites into the batter and pour over the pineapple mixture. Bake at 375 degrees for 30 minutes.
