PINEAPPLE UPSIDE DOWN CAKE 
1 1/2 c. flour
1 c. sugar
2 eggs, beaten lightly
1 tsp. baking powder
1/8 tsp. salt
1 1/2 sticks of butter
1 No. 2 can crushed pineapple
1 c. brown sugar

Melt butter (I use a deep cast iron skillet). Add brown sugar. Put pineapple in skillet, but not juice. Set aside. In large mixing bowl, mix flour, sugar, baking powder and salt on low speed. Add pineapple juice, eggs, butter. Pour batter over pineapple and brown sugar mixture. Bake in 375 degrees for 35 to 40 minutes or until toothpick comes out clean. Turn upside down on plate after it cools a while.
