PINEAPPLE UPSIDE DOWN CAKE 
1 1/4 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. shortening
1 egg
1 tsp. vanilla

Measure all ingredients into large mixing bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high, scraping bowl occasionally.

TOPPING:

1/2 stick butter
1 can crushed pineapple, drained
1/2 to 1 c. brown sugar

Heat oven to 350 degrees. Melt butter over low heat in round dish. Sprinkle brown sugar evenly over butter. Place pineapple over entire bottom of dish. Pour cake batter over fruit in dish. Bake 35 to 45 minutes or until toothpick comes out clean. Invert onto plate. Leave dish over cake for a few minutes before removing pan.
