PORK SCALLOPINI 
1 lb. pork tenderloin
1 egg, slightly beaten
1 tbsp. water
1/2 c. dry bread crumbs, finely crushed
1/4 tsp. salt
1/4 tsp. onion powder
1/8 tsp. garlic powder
1/8 tsp. pepper
2 tbsp. butter

Cut pork diagonally into 1/2 inch slices. Mix egg and 1 tablespoon water. Mix bread crumbs, salt, onion powder, garlic powder, and pepper. Toss pork with egg mixture. Coat with crumb mixture. Heat 2 tablespoons butter in 12 inch skillet over medium heat until hot. Cook pork in butter about 8 minutes or until done. Remove pork from skillet; keep warm.
