STRAWBERRY - NUT BREAD | |
3 c. all-purpose unbleached white flour 1 tsp. baking soda 1/2 tsp. salt 3 tsp. cinnamon 2 c. sugar 2 c. sliced fresh strawberries 4 eggs 1 1/2 c. oil 1 c. chopped nuts Sift the dry ingredients together in a large mixing bowl. Make a well in the center. Beat together the strawberries, eggs, and oil and pour into the well. Stir just enough to dampen dry ingredients. Add nuts. Pour mixture into 2 or 3 well-greased loaf pans, filling half full. Bake at 350 degrees for 60 minutes or until toothpick comes out clean. Cool 20-30 minutes before removing from pans and finish cooling loaves on rack. Do not slice until completely cooled. |
