STRAWBERRY NUT BREAD | |
1 (10 oz.) pkg. frozen sliced strawberries 2 eggs 1/2 c. vegetable oil 1 c. sugar 2 c. all purpose flour 1 1/2 tsp. cinnamon 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. ground nutmeg 1/2 tsp. salt 3/4 c. walnuts or pecans Thaw berries according to package. Beat egg until fluffy. Add oil, sugar, and berries; beat until light. Mix flour, cinnamon, powder, soda, nutmeg, and salt. Blend flour mixture into strawberry mixture just until moistened. Do not over mix. Pour into greased 9 1/2 x 5 inch loaf pan. Bake at 350 degrees for 50-60 minutes or until tester comes out clean. Cool 5 minutes. Remove from pan; finish cooling on rack. Serves 16. |
