MOM'S PICKLED BEETS 
3 qt. vinegar
6 lb. brown sugar (12 c.) - use only 9 c. if desired
3/4 tsp. powdered alum
1 1/2 tsp. salt
4 1/2 tbsp. mixed spices (whole, unground) tied in bag

Boil ingredients and pour over cooked beets that have been placed in sterilized canning jars. Seal and store.
