KELEWELE 
4 lg. plantains (ripe)
1 tsp. ginger
1/2 tsp. ground red pepper
1 tsp. black pepper
1 tsp. ginger (powdered)
1 med. onion
2 tsp. water
3 c. vegetable oil

Wash and peel ripened plantains. Cut into dice or small cubes. Mix all ingredients and add to water. Add mixture to diced plantain and mix everything with spoon. Place in hot oil and deep fry until golden brown. Serves 4. (Could serve with roasted peanut or groundnut or rice.) Could also be served as dessert.
