INDIAN PUDDING 
1 qt. milk
1/2 c. yellow cornmeal
1/2 c. molasses
2 eggs
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. ginger
2 tbsp. melted butter

Scald milk. Pour into cornmeal in a double boiler. Stir constantly 20 minutes over medium heat. Mix butter, molasses, salt, cinnamon and ginger. Beat eggs and add to rest of mixture. Add a little milk/cornmeal to liquid and then add all together. Pour into greased casserole dish. Place dish in pan of water in oven for 1 hour at 350 degrees.
