BAKED POTATO SALAD 
8 lg. or med. lg. potatoes
1/4 c. chopped onions (I use 1/2 c. or more)
1/2 lb. Velveeta cheese, cubed (more if desired)
1 1/2 c. mayonnaise
1/2 lg. diced bacon, fry lightly, drain (4 or 5 oz. is enough)
Slice, stuffed olives (6 or 8 is enough)

Cook potatoes and dice. Mix potatoes, onions, cheese and mayonnaise in casserole. Put bacon and sliced olives on top and bake, uncovered at 350 degrees for 1 hour. Some diced green peppers can be added to.
