CHINESE STYLE FRIED RICE 
1 1/3 c. water
3 tbsp. butter
1/3 c. chopped onion
1 1/3 c. Minute Rice
1 egg, beaten
2 to 3 tbsp. soy sauce

Bring 1 cup water to boil in saucepan. Stir in rice. Remove from heat; cover and let stand 5 minutes. Meanwhile, cook egg in butter in a 10 inch skillet until set (like scrambled). Add onion and rice, and cook, stir over medium heat until rice and onion are lightly browned (about 5 minutes). Combine remaining water and the soy sauce; stir into rice. Makes 3 cups.
