CUBE STEAKS DIANE 
1 lb. cube steaks
1/8 tsp. pepper
2 tbsp. butter
1/4 c. scallions or green onions, thin sliced
1/2 c. beef broth
1 tbsp. Worcestershire sauce
1 tsp. Dijon mustard
1 tbsp. cornstarch
1 tbsp. chopped fresh parsley
Chopped fresh parsley for garnish

Sprinkle meat with pepper. Heat 1 teaspoon butter in 12" skillet over high heat. Add steaks and cook 1 to 2 minutes on each side until browned. Remove to a platter, cover to keep warm. Reduce heat to moderately low. Add remaining butter and scallions to skillet. Cook 1 to 2 minutes until scallions are wilted. Mix broth, Worcestershire sauce, mustard, cornstarch and 1 tablespoon parsley in small bowl. Stir into skillet, boil about 2 minutes, stirring constantly until sauce thickens slightly. Pour over steaks. Makes 4 servings.
