CHICKEN (Chinese Style) 
4 chicken breasts, deboned and cut in 1 inch cubes
1 sm. onion, chopped
Oil enough to cover bottom of pan
1 can chicken broth
1 can water chestnuts, sliced
1 pkg. frozen pea pods
1/2 lb. fresh mushrooms, sliced
Cornstarch

Saute onions, add chicken, cook until done, about 10 minutes. Add mushrooms; stir. Add chicken broth and water chestnuts. Season to your liking with salt, pepper, garlic salt and soy sauce. Thicken with cornstarch (2-3 tablespoons dissolved in water). Before ready to eat, add pea pods and cook 2-3 minutes longer. Serve with rice.
