ZUCCHINI CAKE 
3 eggs
1 c. salad oil
2 c. sugar
2 c. peeled, grated zucchini
3 tsp. vanilla

3 c. flour
1 tsp. baking soda
1/4 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1 c. chopped nuts (optional)
1 c. raisins (or blueberries or pineapple)

Pour into 2 well greased and floured bread pans and bake at 350 degrees for 1 hour.
