POTATO CHEESE SOUP 
Each time this soup is reheated, it gets better!

6 to 8 large baking potatoes
2 cups milk
4 cups chicken broth
2/3 cup all-purpose flour
2/3 cup butter
8-12 strips bacon, cooked
1 cup dairy sour cream
1 (8 oz.) pkg. cheddar cheese, shredded
salt and pepper, to taste

Bake potatoes until soft, then peel. Mash or cube the potatoes depending on the desired consistency for the soup.

In a large soup pot, combine butter and flour to make a roux. Cook for 1 minute, then slowly whisk in the liquids.

Add salt and pepper, potatoes, cooked bacon, and cheese. At the last minute, stir in the sour cream. Season to taste with salt and pepper before serving.

Soup will be thick. Add milk to reheat.

This is the best cheese potato soup out there! I have made it several times and was freaking when I almost didn't find it today.. I spent an hour trying to find it and it was there the entire time! I never clicked on this because I thought it was under a different heading.. have it saved now!

Sauteed a little minced onion and celery before making roux. Only because I like the flavor, not to improve recipe. Crumbled the bacon on top(very good without it too, for those who don't eat meat!). Just a wonderful recipe, easy and yummy! Can't wait to make again on a cold winter's night!

This is by far the best baked potato soup recipe I have served. I highly recommend having extra shredded cheese and bacon to top it off. Also, if you can make this a day ahead of time, it will be that much better!

Awesome soup! It's hard to get a good texture with creamy soups, but this is just right. I sauteed some leeks in the butter for a "green onion" taste and left half the baked potatoes with their skins on-delicious!

This recipe is fantastic! As my husband says, "it's potato, cheese, and bacon, how can you go wrong!" I used 7 bag potatoes and ended up adding another 2 cups of broth to make it a little smoother and not so thick. I also substituted plain yogurt for the sour cream. I added half an onion to the butter prior to adding the flour. Even with these tweeks, it turned it great! Enjoying my second cup right now. Definitely recommend for a rainy day.
