SQUASH CASSEROLE 
6 to 8 med. sized crookneck squash
2 lg. onions
1 box Stove top stuffing mix
1 egg
1 1/2 c. grated cheese
1 tsp. salt

Chop squash and onion in small pieces and combine in a pot and boil for 30 minutes or until soft. Mix squash, onion, stuffing mix, egg and 1 cup of cheese and salt. Pour into a greased casserole dish. Place in a 350 degree oven for 25 minutes. Remove from oven and add the remaining 1/2 cup cheese on top of casserole. Bake for 5 more minutes or until cheese has melted.
