APPLE CREPES 
1/2 c. whole wheat flour
1/2 c. white flour
1 tsp. pecan meal
1 c. skim ilk/soy milk
1/2 tsp. salt
1 egg replacer

SYRUP:

1 (10 oz.) apple juice concentrate
2 c. water
4 tbsp. corn starch
1/2 tsp. lemon juice
1/4 tsp. coriander

FILLING:

1 tbsp. maple flavorings
6 lg. apples
3 tbsp. apple juice concentrate
1/2 tsp. vanilla
1/4 tsp. coriander

Blend first 6 ingredients. Pour on coated griddle to make thin crepes (2 tablespoons each).

Filling: Peel, slice and cook apples in juice. When tender, add rest of ingredients. Place 1/3 cup in each crepe. Roll up seam side down. Whiz all syrup ingredients in blender. Cook until thickened. Pour over crepes before baking. Bake crepes 20 to 30 minutes at 350 degrees.
