ITALIAN DOUGHNUTS 
3 eggs
2 tsp. baking powder
1 1/2 tsp. sugar
1/2 lb. ricotta cheese
1 qt. corn oil for frying (other oil will spoil taste)
1 c. sifted powdered sugar
1 c. sifted flour
Dash of salt
1/4 tsp. vanilla

In medium bowl, beat eggs until foamy at medium speed. Add flour, baking powder, salt, sugar, ricotta cheese, vanilla. Mix until well blended. Batter will be sticky. Pour oil into deep fryer at 350 degrees; make sure oil is hot.

With tablespoon, push gently into oil about a teaspoonful. Fry until golden brown, about 3 minutes. Turn them when needed. Remove from oil and drain on paper towel. Roll in powdered sugar and serve warm. Makes about 36-40.
