FRESH PEAR PIE | |
1/2 of 11 oz. pkg. pie crust mix 6 very ripe pears (about 3 lb. unpared) 3/4 c. sugar 3 tbsp. lemon juice 3 tbsp. quick cooking tapioca 3/4 c. oatmeal 1/4 c. light brown sugar (packed) 1/4 c. (1/2 stick) butter, melted Preheat oven to 400 degrees. Prepare pie crust mix using 9 inch pie shell with high fluted edge. Halve, core and cut the pears into 1/2 inch slices. Toss with sugar, lemon juice and tapioca in large bowl until well coated. Pile high in pie shell. Mix oatmeal, brown sugar and butter in small bowl. Place tablespoons of mixture over top of pie. Bake in hot oven (400 degrees) for 10 minutes. Cover pear filling with aluminum. Bake 45 minutes or until pears are tender. Uncover and bake 5 minutes longer to crisp oatmeal topping, cool slightly on wire racks. Refrigerate overnight. |
