CONNIE'S PECAN PRALINE CAKE AND
BOILED ICING
 
1 c. buttermilk
1/2 c. butter
1 c. light brown sugar
1 c. white sugar
2 eggs
2 c. all-purpose flour
1 tsp. baking soda
3 tbsp. cocoa
1 tbsp. vanilla
1/2 tsp. salt

In small saucepan, warm buttermilk and butter. Put in large bowl and add sugars and eggs; beat well. Combine dry ingredients; sift directly into bowl. Mix until smooth; add vanilla.

Pour into a greased and floured 9 x 13 x 2 pan. Bake 25 minutes.

BOILED ICING FOR PRALINE CAKE:

1/2 c. butter
1 c. brown sugar
1/3 c. evaporated milk or half and half
1 c. chopped pecans

Combine all ingredients in saucepan; heat until butter melts. Spread mixture over top of warm cake while still in oven, then move to boiler.

Place cake about 4-inches below broiler and cook until icing bubbles and turns golden, about 1 1/2 to 2 minutes.
