CHICKEN AND RICE CONCOCTION | |
1 c. chopped onion 2 tbsp. butter 1 c. uncooked rice 2 c. chicken broth 1 tsp. salt 1/2 tsp. pepper 2 1/2 c. cooked chicken, in large pieces 1 (2 oz.) can pimento, diced 1 med. green pepper, cut in thin strips 1 c. cooked peas (English) Cook onions in butter until soft, but not brown. Add rice, broth, salt, pepper. Heat to boiling, stir once. Reduce heat, cover and simmer 15 minutes or until rice is tender and liquid is absorbed. Add remaining ingredients. Mix lightly. Cook covered 5 minutes longer. |
