CEVICHE 
1 lb. very fresh white fish
1 c. lime juice
1 sm. onion, minced finely
1 tomato, peeled and diced
4 tbsp. oil
1 tbsp. vinegar
1/4 to 1/2 c. diced green chilies
Salt to taste

Dice the fish and combine with the juice. Marinate overnight, stirring often. Add remaining ingredients and mix well. Cover and chill until ready to serve.
