WHEATY GINGERCAKE | |
1 1/2 c. flour 1 c. whole wheat or graham flour 1/2 c. sugar 1 1/2 tsp. cinnamon 1 tsp. ginger 1 tsp. baking soda 1/4 tsp. salt 1/4 tsp. cloves 1 c. buttermilk 3/4 c. molasses 1/3 c. cooking oil 1 egg and 1 egg white or 2 egg whites Stir together all dry ingredients; combine rest of ingredients. Add liquid to blended dry ingredients. Stir until moistened. Pour into greased 9 inch square pan. Bake at 375 degrees for 35-40 minutes. Serve warm with Lemon Sauce or Whipped Topping. LEMON SAUCE: 1/2 c. sugar 1 tbsp. cornstarch Dash of salt Dash of nutmeg 1 c. water 2 tbsp. butter 1 1/2 - 2 tbsp. lemon juice Mix dry ingredients. Stir in water. Cook over low heat until thick and clear. Blend in butter and lemon juice. |
