CONSOMME RICE 
1 (28 oz.) box of MGB white rice
3/4 lb. butter
3 bunches of green onions with tops
1 sm. green pepper
1 lg. can mushrooms
2 cubes beef flavor broth (Telma)
2 cubes chicken flavor broth (Telma)
Salt to taste

Dissolve beef and chicken cubes in 1 1/2 cups water for each cube. Cut green onions and tops and green pepper in small pieces. Melt butter and add onions and green pepper pieces; simmer for 10 minutes. Add uncooked rice, salt and mushrooms. Simmer in frying pan for additional 5 minutes. Put rice mixture in covered casserole, add 3/4 of the broth mixture and place in oven at 325 degrees for 1 1/2 hours. Stir occasionally. Add additional broth if it looks dry. Serves 15. The recipe may be halved.
