PINEAPPLE UPSIDE DOWN CAKE 
1 plain yellow cake mix
28 oz. crushed pineapple
1/3 lb. butter
1/2 lb. brown sugar
2 eggs
1 1/4 c. water mixed with pineapple juice

Drain pineapple, save juice, and set aside. Melt butter in 9x13 inch pan, sprinkle in brown sugar, then crushed pineapple. Add enough water to pineapple juice to make 1 1/4 cups of fluid.

Mix juice, water, eggs, and cake mix for 3 minutes. Pour over pineapple in pan. Bake 45 minutes or until done at 350 degrees. Serves 12.
