MEXICAN QUICHE | |
1 (4 oz.) can Old El Paso whole chilies 6 slices bacon, cooked, drained & crumbled 1 c. (4 oz.) Swiss cheese, shredded 1 pie crust shell 3 eggs 1 c. half & half or lite cream 1/4 tsp. salt Dash of ground nutmeg Drain chilies, pat dry, chop into large pieces. Add crumbled bacon. Sprinkle cheese into bottom of pie shell, then top with chilies and bacon. Mix eggs, cream, salt, and nutmeg in medium bowl. Pour slowly over pie. Place on heated cookie sheet. Bake at 425 degrees for 15 minutes; at 350 degrees for 20 minutes until knife comes out clean. Cool 10 to 15 minutes before serving. Really good. |
