AUNT DOT'S PICKLES | |
16 lb. whole (not too sm.) cucumbers 1 box plain or pickling salt 1/2 box alum 10 lb. sugar 1 gallon white vinegar 1 box pickling spice Dissolve in water (salt and alum). Enough water to cover cucumbers, and soak for 14 days. After 14 days, rinse well several times in cold water and then slice. Soak overnight in alum water. Rinse well. Pour 1 gallon white vinegar over cucumbers and let set 6 hours. Pour vinegar off (you don't need it anymore). Use 10 pounds sugar and put layer of cucumbers and layer of sugar in crock about half way. Tie 1 box of pickling spice in thin cloth and put in. Continue to layer sugar and cucumbers. Let set several days. Will make its own syrup. Do not heat anything. Use cold. |
