AUNT FAY'S SWEET CUCUMBER PICKLES | |
1 tsp. whole cloves 1 tsp. mace 1 tsp. whole allspice 1 stick cinnamon 1 tsp. celery seed 1 tsp. cracked ginger 2 c. lime 2 gallons cold water 7 lbs. 1/8 inch slices cucumber 2 qts. 5% cider vinegar 6 lbs. sugar 1/2 oz. green food coloring 1 tbsp. salt Tie first 6 ingredients in several layers cheese cloth. Mix lime and water, and soak cucumber slices in lime water for 24 hours. Drain, rinse, and soak for 4 hours in plain water, changing water every hour. Drain well. Make syrup from vinegar, sugar, food coloring, salt, and spices, bringing to boil. Add cucumbers to syrup and let stand overnight. Boil all together next morning for 1 hour, stirring often. Remove spices, put pickles and syrup in jars and seal. Makes 7 quarts. |
