SWEET CORN AND CUCUMBER SOUP 
1 green onion, chopped with tops
1 tbsp. butter
2 c. peeled and sliced cucumbers
3 c. chicken broth
1 c. fresh corn kernels
1/2 c. plain yogurt
Chopped chives for garnish
Salt and pepper to taste

Lightly saute onion in butter; add cucumbers and broth and simmer, covered, for about 15 minutes. Add corn kernels and simmer for 3 more minutes. Puree the mixture in a blender, processor or food mill. Stir in the yogurt, salt and pepper. Serve hot or cold, garnished with chives.
