BANANA - PINEAPPLE CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/2 c. cooking oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla extract
3 eggs
2 c. diced banana

Preheat oven to 350 degrees. Grease an 8-inch round tube cake pan. Set aside. Sift together dry ingredients. Add undrained pineapple, cooking oil, vanilla, eggs and banana, mixing until blended, but do not beat. Pour batter into prepared cake pan. Bake for one hour and 20 minutes. Cake will crack slightly on top. Cool in pan on rack. Will remain moist and fresh for some time.
