SCRAMBLED SURPRISE 
1 doz. eggs
1 c. diced ham
1 c. chopped mushrooms
1/2 c. diced onion
1 pkg. thawed chopped spinach
1/2 c. Cheddar (or more), shredded

Saute ham, mushrooms, onion and spinach on medium heat until tender, with 2 tablespoons butter. Remove to dish.

Add beaten eggs to pan. Cook on medium heat until about half cooked. Add sauteed ingredients and cook until eggs are done. Place on platter and sprinkle cheese on top of egg mixture. Place in warm oven until cheese melts. Enjoy with sliced tomatoes and sour cream.

Ham may be exchanged with sausage. Spinach may be exchanged with broccoli. Makes 6-8 servings.
