SCALLOPED POTATOES 
8 c. sliced raw potatoes (1 potato = 1 c. approx.)
2 tsp. salt
6 tbsp. flour
1 tsp. onion powder
4 c. milk
3/4 stick butter
1/2 lb. Velveeta, Chef's Delight or similar cheese

In a 1 1/2 to 2 quart saucepan melt butter over low heat. Blend salt, onion powder and flour into melted butter. Add milk and mix well. Add to the milk mixture the cheese which has been cut into small pieces. Cook over low to medium heat, stirring constantly until cheese has melted. In a lightly greased baking dish, 9"x13", alternate layers of potatoes and cheese sauce. Begin with potatoes and end with the sauce. Bake at 350 degrees until potatoes are well done. Approximately 1 1/2 hours. Put foil over potatoes loosely.
