CURRIED CHICKEN CALCUTTA 
1/4 c. all-purpose flour
1/2 tsp. curry powder
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. garlic powder
2 whole chicken breasts, split, skinned, and boned
1/4 c. vegetables oil
1 c. plain yogurt
2 tbsp. lime juice

Combine flour, curry, cinnamon, ginger, and garlic in shallow dish. Add chicken, one piece at a time, dredging to coat. Heat oil in large skillet over medium heat. Add chicken; cook until brown on both sides. Cover; reduce heat to low and cook 15 minutes. Combine yogurt and lime juice in a small saucepan. Cook over low, stirring constantly, until warm. Arrange chicken on serving platter. Spoon about 1/2 of the yogurt sauce over chicken. Sprinkle with grated lime peel and garnish with lime slices and mint. Pass remaining sauce.
