EGGPLANT CASSEROLE 
1 med. eggplant, peeled & cut into 1" cubes
2 tbsp. chopped green pepper
1 egg, beaten
3/4 c. bread crumbs
1/2 tsp. pepper
1/2 c. grated Cheddar cheese
1 tsp. salt
1 med. onion, chopped
1 c. cream style corn

Boil eggplant until tender; drain well and mash. Add remaining ingredients except cheese and mix well. Pour into a 1 1/2 quart baking dish and sprinkle cheese on top. Bake at 350 degrees for 30 minutes.
